Clams with white wine-garlic sauce
If there’s one recipe to try on this site, this is it. These are probably the best clams I’ve ever tried.
Ingredients:
- 6 slices bacon
- 2 TBSP Extra Virgin Olive Oil
- 4 Tbsp. Garlic, very finely minced.
- 2/3 Cup parsley
- 1 heavy pinch red pepper flakes
- 1 C. white wine
- 2 lbs. small clams.
In a large skillet with a cover heat the oil over med. heat.  Cook bacon until Crisp. If you have very fatty bacon you may not need the olive oil, my bacon was quite lean so the oil was definitely necessary.
- Remove to paper towel to drain, then crumble or chop into very small crumbs.
- Add the garlic, parsley and pepper flakes, saute for 1 minute.
- Add the wine and bring to boil over medium high heat. Add clams, cover and steam until clams open, about 5 minutes.
- Remove the clams to serving dishes, sprinkle with crumbled bacon and remaining parsley.
- Pour remaining sauce over the clams.
- Serve with french bread or over pasta.
