Frittata
While watching Tyler Florence on tv a while back he made a Smoked Ham, Gruyere and Caramelized Onion Frittata. It looked pretty good, so I threw something similar together using what I had on hand at the time.
I had imagined this tasting just like an omelet, but it’s not even similar. If you have the time one weekend, definately give a frittata a try.
Ingredients:
- 8 eggs
- 2 Tbsp (approx.) Milk
- 2 Tbsp (approx.) Fat Free Sour Cream
- 1/2 Onion, sliced
- 1/2 Cup Sharp Cheddar Cheese, shredded
- 1/2 Cup swiss cheese, shredded
- 1/2 Tbsp Butter
- 1/2 Tbsp Olive Oil
- Handful of diced new potatoes (Maybe 1/2 cup to a cup.)
- Handful of diced ham, (again, maybe 1/2 cup to a cup.)
- Grated Parmesan Cheese
- 1/2 cup green onion tops (the green part), chopped fine.
Preheat oven to 350 degrees.
Heat butter and olive oil in an 8-inch non-stick skillet. Add sliced onions and potatoes and saute until onion and potatoes develop some color. 10 minutes or so.
While cooking onions and potatoes, whisk together the eggs, cheese, and chopped green onion tops. Once the onion and potatoes are done in the skillet, add the egg mixture and stir to combine. Once the eggs are partially set, add the ham. Transfer the pan to your oven and bake until fully set and beginning to brown on top, about 20 minutes.
Sprinkle the top with Parmesan cheese, return to the oven for 5 more minutes.
Slide the frittata out onto a cutting board and slice into 8 wedges, just like a pizza. Serve with salsa, hot sauce, ketchup, whatever you like with it.
