Grilled Zucchini
This is one of the few things that I can actually claim as my own idea. (though I’m sure that others have done it to, it’s a pretty simple process.)
It’s by far the best way to prepare zucchini that I’ve ever tasted. Even if you don’t like zucchini, you need to give this a try once. It totally changes the flavor, and compared to steamed or fried zucchini, it’s magnificent.
Ingredients:
- Zucchini
- Olive 0il
- Kosher salt
- Fresh ground black pepper
Peel the zucchini, and slice it lengthwise into about 1/4 inch thick slices.
Heat your grill to high. (seriously, this works best on extremely high heat)
Brush with olive oil and season liberally on both sides with kosher salt and pepper. Grill the zucchini until it picks up the familiar black grill marks, turn and repeat on the other side. Be careful not to burn them since you’re working over such high heat.
